
Cantonese Seer Fish

Ingredients
· 2 spring onions
· Fresh ginger, about 2 tablespoons grated
· 1 small bunch of coriander leaves
· 1 tsp soya sauce
· 1 ½ tablespoons Pine-Zapple sauce
· 1/8 teaspoon salt
· 1/8 teaspoon sugar(optional)
· 2 tablespoons water
· 1 medium seer fish- filleted
· 2 tablespoons oil
Method
Julienne the spring onions and set aside. Roughly chop the coriander leaves and set that aside as well. Combine the soy sauce, Pine-Zapple sauce, salt, sugar and water into a small bowl and mix well. Set that aside.
Heat oil in a non-stick flat pan. Add the ginger and let it brown lightly, about a minute. Then add the spring onions. The mixture will be sizzling by then. Next, add your soy sauce Pine-Zapple sauce mixture to the saucepan and keep the heat on high to keep everything sizzling. Cook until the spring onions have wilted – about 30 seconds. Add the roughly chopped coriander leaves now. Gently tip in the fish fillets in the pan and cook on a low flame for 5-7 mins. Shut off gas.
Serve in a glass plate.
